Jackson County Alumni Fish Fry to raise money for scholarships

The Jackson County Chapter of the Mississippi Gulf Coast Community College Alumni Association is sponsoring a fish fry on April 16, 4:30 p.m. – 6:30 p.m. in the green space next to the Admissions Building on the Jackson County Campus. With the $7 scholarship donation, diners will get a boxed meal that includes fried catfish, cole slaw, baked beans, dessert and tea.

The event raises money for scholarships awarded to Jackson County students. Students like Elizabeth Shantel Parker, a sophomore in the Associate Degree Nursing program at the Jackson County Campus. Parker received more than $8,000 total in nursing scholarships to help her attend school. “I am thrilled to share my story with others,” she said. “Without these scholarship funds, I wouldn’t be able to attend college,” she said. “The tuition, books, uniforms and travel to my clinical site in Mobile, Ala. would have been more than my husband and I could afford. The scholarships help cover all those costs.”

Parker said she plans to continue with her education after she finishes at Gulf Coast. “I plan to continue my nursing education and get a master’s degree. I really want to help people and I strongly believe the medical field is the place where I can accomplish that best.”
